Here is a wonderful addition to the summer grill and a great way to use some of those zucchini that are so prolific at this time of year. A crisp, zingy, New Zealand Sauvignon Blanc, like Monkey Bay (at Cool Springs Wine & Spirits) would be just the thing to drink with this summer treat.
1 large zucchini
1/4 cup Italian-style salad dressing
Slice zucchini in to 1/4 inch slices. Toss is a bowl with Italian dressing. Place on a hot grill and grill about 4 to 5 minutes or until nice grill marks appear and the zucchini is slightly limp. Serve and enjoy.
