Scallops in White Wine
Serve this great entree with a light, bright, Italian white like La Calla Vermentino ($12.99 at Cool Springs Wines & Spirits).
Ingredients
1 1/2 lbs. scallops
2 cups dry white wine
4 shallots, chopped
2 lbs. mushrooms, quartered
1 T. chopped fresh parsley
1/2 t. salt
1/2 t. marjoram
Directions
1. Wash scallops and pat dry. In large nonstick skillet, simmer scallops in wine for 5 minutes.
Remove scallops and set aside.

Bring liquid to a boil.
3. Add shallots and mushrooms. Cook until most of the liquid is absorbed.
4. Add scallops, parsley, salt, and marjoram. Serve immediately,
